ClubMulwala is delighted to announce the appointment of Mat Brewer as Executive Chef. Mat may be a familiar face, as he commenced his working life at the Club a few years ago before gaining experience at various regional restaurants and a childcare centre. He returns with vast professional knowledge and the drive to lead the talented team to continue delivering outstanding dining experiences at ClubMulwala.
What excites you the most about undertaking the role of Executive Chef?
I’m hoping to bring all the experience I’ve had in a range of environments to ClubMulwala and building on the strengths of the Dining and Function environments that are here. I really look forward to leading a great team, and hoping to draw on everyone’s strengths to provide outstanding customer experiences.
What do you love most about ClubMulwala?
It is a very friendly environment and so many of our customers are loyal, returning guests. I think there is an attachment to the place which is quite unique. The management team is very professional and experienced so it’s a great landscape to continue to grow and learn in.
Do you have a food specialty?
I thought you might ask me that and I find it hard to narrow it down actually! I guess it would be best summed up as Modern Australian Cuisine. I’m mostly driven to provide exceptional flavour and I take pride in the presentation of food.
You have worked as a chef in a childcare centre - in terms of chef experience, what did you bring away from that role?
Probably gave me more experience in catering for food intolerances which is such an important aspect of working in hospitality now. It’s crucial to be diligent about ingredients and possible issues and cater for all clientele.
What do you cook at home?
Meat and 3 veg! Nothing spectacular but good wholesome food for the family. My partner and I share the cooking and, with busy careers and two young children, we keep it pretty simple.
With both young daughters heading off to school this week, what’s in their lunchbox?
Probably the same with most lunchboxes - salad roll, some cut up veges, fruit and a snack. Our girls eat most things so it’s not really a problem. Sometimes getting out the door on time is though.
Do you watch cooking shows like Masterchef?
No I hate them! I find they’re not a realistic depiction of how a commercial kitchen works. Everything is already prepped, and working in a busy kitchen is a constant juggling act.
What are your interests outside of work and family?
I’m into sport and especially tennis. I have a big interest in cars (Holdens) and I’m also interested in property and real estate.
I love the adrenaline rush of working in a busy kitchen. I get a great sense of satisfaction from delivering quality dining experiences, resulting in happy customers.
